At Los Danzantes, we conceive of cuisine as a space for living memory. For this reason, during Lent (Cuaresma), we present specials that engage in a dialogue with one of Mexico’s oldest and most significant gastronomic traditions.
Historically, the Lenten vigil and the abstinence from meat gave rise to an ingenious cuisine deeply connected to the territory: romeritos, nopales, legumes, fish, charales, and stews with pre-Hispanic roots that reveal an exceptional technical and symbolic richness.
More than a simple nod to the calendar, our Lenten specials are an affirmation of identity. Embracing this cuisine is also an act of cultural resistance: rescuing ingredients, recipes, and ancestral knowledge that speak of sobriety, respect, and creativity, while reinterpreting them through a contemporary lens. In this way, we celebrate seasonality and remember that Mexican cuisine finds, even within restriction, one of its most profound expressions.
